Jennifer K. Griggs

Jennifer K. Griggs, FNP-C, MSN, serves as Undergraduate Faculty Instructor in the School of Nursing. Mrs. Griggs completed her Associate of Science degree in Nursing from Our Lady of the Lake College (now Franciscan Missionaries of Our Lady University) in 2001 and her Bachelor of Science in Nursing from University of Phoenix in 2009. Mrs. Griggs found her love for teaching at Live Oak High School while teaching Certified Nursing Assistant, Medical Terminology, and Medical Assistant. She would decide to earn a Master of Science in Nursing Education from University of Phoenix in 2019 and then a Post-Master’s Certificate in Family Nurse Practitioner in 2024 from Herzing University. In her faculty role, she is passionate about teaching foundational nursing courses and supporting students as they grow into confident, compassionate nurses. She strives to create a safe and welcoming learning environment where students feel encouraged to think critically, develop strong clinical judgment, and embrace the knowledge, skills, and values needed to provide holistic, patient-centered care.
